Once upon a time. . .Oh that’s been done to death!

Well, at the inception of this blog, the plan was to present a diverse blend of politics, religion (you know that always makes friends!), crafting ideas, cooking, and then anything else my extraordinary brain came up with.

In other words, it was to be eclectic, which I am. My interests are unlimited, my decorating ideas run from country artisan to art deco, and that’s a pretty wide chasm. My food delights range from Italian, Mexican, to down home Americana and Chinese. I like cuisine from Egypt and India. About the only thing I don’t care much for is German food.

Anyway, lately, for about the last couple of years, we’ve been fairly limited to politics, with a bit of religious thrown in to keep it honest. Here and there I’ve dropped a recipe, but today, well I just pulled out all the stops. So those of you who could care less, fair warning, this is food oriented.

First up, I told you that we were having General Tso’s Chicken and crab Rangoon. I made them a couple of weeks ago. And they turned out very good indeed, so I thought I’d let you in on the recipe. A word about the Tso’s chicken. There are myriad recipes for this. Basically it’s to be a kind of coated breast meat and on the hot side. So here is how I did that:

General Tso’s Chicken

• 1/2 chicken breast, cut up into bitesize pieces
• 1/3 c flour
• 1 tbsp cornstarch
• 1 tsp baking powder
• 4-5 serrano chilis (I added a minced one to the veggies)

Mix together in a bowl and add enough liquid (water or chicken stock) to make it all gooey.

In the wok, heat 1/2 c vegetable oil (give or take–none of this is rocket science).Add 4-5 chilis (the red serrano and let them sizzle until they pop and turn dark.  Add chicken pieces trying to keep them separate and brown on both sides until done. Probably about 2 minutes a side.Remove chicken pieces and continue adding and frying until all are done. Set aside.

Add whatever vegetables you want to the wok. These should have been cut up and bagged earlier.

I added:

• carrots, celery, an onion sliced, broccoli stems sliced,

Stir fry until tender but crisp. Add any sauce you like or cornstarch and chicken stock, with some soy. I  used a Teryaki sauce. Throw the chicken back in, and add three or four sliced green onions. Toss until warmed through and all is coated.

Serve over rice.

Crab Rangoon

• 8 oz fake crab or real as you prefer (I found the fake just fine for this appetizer)
• 4 oz cream cheese at room temperature
• 1 scallion chopped
• 1 medium clove garlic sliced
• pepper
• salt only if using fresh crab
• minced celery if you like
• 1 egg (or egg white) whisked
• 1 package wonton wraps ( you will use about 1/4 of them. I divide the rest into 1/4 packets and wrap in plastic and put in a freezer bag and throw in the freezer. They defrost fine)

Place everything but the egg and wrappers into a food processor and whir up until it is a paste but with visible “pieces. Scrape out into a bowl and sit down with your wrappers and egg wash. Take a wrapper, place a mounded tsp of the crab paste in the middle, with your finger dip in the egg wash and trace along two edges meeting at a tip. Draw the unwashed side over the crab and form a triangle, press out the air gently and press all the edges.

Do this until you have used up all the paste (I had about 30 or so). Place on a jelly roll pan lined with parchment, not touching each other. Place in freezer for a couple of hours until frozen hard. Place them in a freezer bag and you are done.

When you want to use them, remove as many as you wish. Heat some oil in a very small sauce pan (saves a lot of oil that way) and fry for about 1 minute or less one at a time. Golden brown is what you are looking for. Place on paper towel to drain and place in a warm place to hold until your stir fry is done. (You can bake them too, I’m guessing at about 400-425°. I’d check at 10 minutes. Remove when golden brown.

The point is these are as good as most of what you get in a Chinese restaurant and way better than any frozen kind from the grocery story. You only have to make them a couple of times a year, and frankly, its less than an hour’s worth of work anyway.

Okay, so now we move on to a few new tips I’ve managed after 61 years to finally figure out.

Given that in the winter, we shop infrequently, I alway have trouble keeping fresh vegetables fresh. Well I have some ways that finally give them a refrigerator life of a good two weeks. And that’s a lot better than usual. So here is what I learned:

Green onions: clean them within a day, cutting off the root and outer layer and cutting off the green end where you normally would. Take a paper towel and wet it, wringing it out. Wrap this around the root end of the onions and place in a tumbler glass. Cover with one of those light plastic bags you placed them in at the store. Just wrap around. Sit in refrig. Trust me…your onions neither dry out, not become all rotten.

Cucumbers and peppers: I used to wrap them in plastic wrap and they always rotted within days. Then you cut off a chunk of the rotten stuff. You end up losing about 1/2 of each. This works. Buy those cherry tomatoes or raspberries  or whatever in the plastic hard containers with slotted holes in the sides. Save them and place your unwrapped cukes and peppers in them. The cut edges dry out and are perfectly dry and unrotted for up to two weeks. As to the peppers, best to clean out the seeds at the first use.

Mushrooms: Either they became shriveled and hard or yucky slimy. Open the package and use what you need. As to the rest: throw away the plastic wrapper over the little container. Place this in a brown paper bag, close and place in fridge. They were fine two weeks later.

Happy cooking. Today we are having: Beef Stroganoff over noodles, salad and bread.

What’s up here, is weather. Finally a break in the two-day swelterfest! A nice manly thunder boomer went through awhile ago and we got some nice rain for a half hour or so. A good soaker as they say.

I can almost hear the sounds of “thanky neighbor” from the crops. Hopefully we have also stymied the turkeys that we now are sure were the culprits in the tomato thievery.  The Contrarian has vowed that he may set out and bring home the bacon (or in this case gobbler) if they persist in not stayin’ on their own turf.

Yeah, I said I wasn’t going to preach here, but really if you haven’t signed up for 3quarksdaily.com you are missing something. They have such a wide range of subjects that you will just come across the most amazing stuff. Who knew there was a site called: AskPhilosophers.org? Amhurst College has it, and well, I find that the longer I’m blogging, the more interested I get in sites that really make me think–open my horizons if you will. I’m layin’ back and enjoying the day, as best as I can, given it’s barely breaking 70 today. Not skipping church, if you were thinking that. I went yesterday, a first time for me. I was obligated to set up for our library book sale, so it obviously made no sense not to go to Saturday evening services. It was different. Not my cup o’ tea as they say. But as our priest said, “now you’ve been to one!”

So, I’m foot loose and fancy free as they say, or don’t as you prefer your metaphor.  I’m not sure what foot loose means, nor fancy free for that matter. Another of those things we take for granted and have no clue where they came from. Probably had something to do with the plague or something. You know that “ring around the rosy” got it’s start there don’t cha?  Yep.

Moving right along, I just wanted to announce that I’m a bona fide professional book reviewer. I’m sure you can tell the difference, when I passed through that portal into the rarefied confines of New York publishing heaven. Yes indeed, and the view is quite fine looking down upon the rest of you wannabes.

The proof of my new found status is that I received in the mail, U N S O L I C I T E D, my first book from a publisher. Now I was curious, and somewhat confused to be sure at first. I dutifully looked through my LibraryThing (located to the left down the sidebar), assuming it was one that I had checked off as wanting to review. No such find. I noted that it came from the Hachette  Book Group, which distributes for Little Brown & Co. I noted that the review I just did for “The Evolution of God” came from LB&C. So my interest was piqued.

I finally wrote an email to the distributor, and received a reply rather quickly. Indeed, they had thought I might enjoy the book sent, and would be most pleased should I review it. A cheesy smile encompasses my face, as I am back in the throes of “professional” something or other, albeit, no word of $$$ seemed to cross a lip either way. I’m not sure if money is required to seal the deal, but I’m choosing to revel in my new found glory. I assume of course that you are all suitably impressed and will announce this fact around your neighborhood, family, and professional associations as well.

Moving on to the short takes as it were. I was alerted via email by Shannon of a blog I should look at, a post in particular and found myself at “Caught a glimpse of Jesus down by the railroad tracks…”  This in reference to my mini rant of two days about  “What is the Message?”  Said blogger is in discernment for the diaconate in TEC, and runs a homeless shelter. Interesting and compelling reading, so take a look.

I ran across this piece and found it highly amusing and well, heck far be it from me to stop beating a dead horse. I say turn it into horseburger! Sarah, well known, for being the most incurious politician in America, unless the curiosity has to do with herself, is almost unintelligible as you well know. Her inability to capture a single thought and expound on it in any rational way are legend. This post from John Lundberg at HuffPo, shows just how easy it is to find the poet in Sarah’s words, if not any sense. Since poetry need not contain sense, well it all makes perfect sense doesn’t it? Enjoy. Few laughs are as cheap as this one.

A couple of atheists took me to task for my post last week about atheists and that I found them intellectually wanting. Seems at least one person agrees with me, lumping their “certainty” of no God as about as obnoxious as the “certainty” of fundamentalists. Now I hadn’t thought of that. Just a short piece by worth a gander. As I continued compiling this post, more was generated in comments to the above and so another post ensued. It makes for good reading if you are so inclined in the atheist-vs-agnostic-vs-believer saga.

And just cuz it’s been forever since I posted a recipe, I thought I’d do one that makes my mouth water, nachos! Good homemade nachos are priceless in the Tex-Mex inventory, and this one just says, yowie, that’s a spicy nacho! As with all nachos you can add or subtract ingredients here and there as your taste dictates. Let’s hear it for Spicy Chicken Nachos!

Well, I’ve been saving a few articles I have run across during my convalescence. As we alluded to last week, the post election press is full of the usual Obama transition elements, but much more fun is the crazy world of Republican politics. The fur is beginning to fly as predicted between Sarah and the McCain campaign operatives. As well, we find the beginnings of the super fight brewing between the moderate wing of the GOP and the reactionary wingnut right. Months of fun are to follow!

Religious Dispatches reports that the much touted and predicted death of the Religious Right is highly exaggerated. In fact, what we will witness seems to be a fight among them for control of the movement. The more moderate faction will attempt to work with the Obama administration, the more wingnuttery will vie for control and try to direct the GOP in an even more conservative mode. Read their analysis.

I am always fascinated with any article that purports to dissect people from a psychological point of view. This article from The Daily Beast suggests that at least subconsciously, McCain deliberately made decisions that would guarantee his defeat. This was not conscious but was subconsciously his way of destroying the people who had destroyed his campaign in 2000. I don’t know if its correct, but I very much have always assumed that much that drove Dubya was tied to his need to prove himself to daddy. I think McCain has issues that stem from his successful father and grandfather and his relative failure as a Navy man. Additionally I think his POW time has a huge impact on him psychologically that was dangerous in it’s possibilities. Read this article and make up your own mind.

Another great post at Religious Dispatches about what role race, gender and religion played in this election. I found the analysis quite thorough and if this subject interests you, I’m sure you will find something worthwhile in the reading.

As we welcome a new president in, Britannica Blog has a fun little post on other presidents and some of the quirky things they said and did. Did you know for instance that John Adams swam nude regularly in the Potomac? See? Now go get that perfect water cooler tidbit that you so desire to dazzle your coworkers with. Also good for the kids to use in that next book report! LOL.

History News Network probes the issue of race and it’s impact on the election. Their review of polling information provides some important conclusions that we should all reflect upon. Most important the so-called “Bradley” effect seems to have been debunked as erroneous.

As someone who is more often critical of the Vatican than otherwise, I am pleased to report that Vatican officials are returning the head of a sculpture to Greece for inclusion in it’s proper place in the Parthenon. The head will be on loan for a year, and may be renewed. As some may be aware, the topic of antiquity pieces being returned to their lawful owners is hot news around the archaeology world. Reportedly, the Vatican possesses at least two other pieces of the Parthenon which may also be turned over to Greece. In any event, it’s a fascinating subject. Visit Rogueclassicism for the details.

Oh chocolate sets my heart a singing as you well know. Baking Delights has a lovely chocolate lava cake to offer you palate. I tried one recipe for these which failed rather badly, so I’m interested to try it again when my back allows a little more time in the kitchen. Enjoy.

Since the holidays are now close upon us, I thought I would include this rather interesting recipe for empanadas which are a popular finger food in Spain and Portugal. These are pork curried empanadas and they just sounded great. If you are having a party and want something really elegant but not too hard to make, you might want to take a look. Simply Recipes also suggests that you can vary the filling and spices of course.

Okay, some of us deal with snow during the winter. And those of us who have been raised in that hellish environment know snow, you know what I mean? Well the Angry African sends us a hysterical piece on a novice and snow. He happily waves at the snow plow who covered up all his clean sidewalk and troops out to start shoveling again. You can imagine how long his love affair with snow lasted! Enjoy this piece, but be prepared to laugh a lot, or cry, if it sounds all too familiar. I was nearly screaming with laughter, and pain as my back started spasming from my guffaws! Stop this!

Although we scored a huge victory in Barack Obama’s presidency, we faired badly in California with Prop 8, the ban on gay marriage. I am sickened as are many by this development, one we thought was not possible only a few short weeks ago. But all is still not lost. This delicate painting was done by Lan Ying in 1642 during the Ming Dynasty and is called “Autumn Clearing in the Misty Woods.” I love these so simplistic works from Asia. They contain a beauty so different from most Western art.

Unbelievable, but the shopping excursion went without incident yesterday. We registered our new Bronco and got around quickly, sneaking a Burger King for dinner! I’m back on my kitchen cleaning, having done the Microwave cart today and the dog watering area. Mostly that is just getting the stains off the floor from well water deposits. Dogs are sloppy drinkers. One day off here, and I feel like I’ve missed out on so much. My feeds were lit up, so maybe if I rework how often they update I’ll be a bit better in getting them done on their own, instead of having to hand update them, which takes me about 30 minutes every day.

The Contrarian is out doing “man work.” Yes, that is what he calls it. It’s usually about car, truck, tractor or wood things. He and the dogs seem to enjoy it, at least until I hear that famous “MOTHER F**KING…..something or other.” LOL. He takes out his aggressions on inanimate objects only, which is truly a good thing! In that he takes after his father who was also quite famous I’m told for screaming tantrums at “things.” Come to think of it, I tend to do the same thing.

Oh, and a quick apology to all. I’ve been a tad busy and this blog has taken a long time to get up each day, so I’m way behind on my comments on your blogs. I have been reading them each day, but run out of time to go back and bring up the sites to leave comments. I’ll hopefully catch up this weekend! Sorry.

On to the news:

What bothers me about all this hoopla about “immigration” is that I feel its veiled bigotry. None of this was an issue before “security” became such an issue. But if that were truly the motive, then the same hue and cry would be raised about our border with Canada, which is almost entirely open. So I think it’s just a lot of white working class folks who blame their employment misfortunes on Latinos, something they don’t do when times are good. The toll being taken on the 80% of Latinos who are legal is a serious problem. Read more at Alternet.

American Presidents Blog has a nice look at Theodore Roosevelt and his Bull Moose Party run in 1912 that enabled Woodrow Wilson to capture the White House. This campaign split the Republicans. Was it all Roosevelt’s fault? Read more to find out.

Anyone who saw Dubya’s disgusting display before the Knesset yesterday should read this next post. The fact that Republicans would do such a thing is, well what you would expect. But it is considered a no-no to engage in “politics” when one is overseas. The thing that is deplorable is that McCain joined in, married himself once again to Bush, and as usual, is on record singing quite a different tune. Once again the elder is having an Alzheimer’s moment. Such things are going to bury him in the fall, much to everyone’s delight.

Britannica Blog has a sad little story about the disappearance of songbirds across America.Such is not the case here in the meadow, as we are treated to the songs of orioles and indigo buntings, doves, chickadees, finches, and the like. I wake to the sound of red wing blackbirds and a whole host of cardinals greeting the day. Such alas is not the case in many other areas, as birds are systematically losing habitat. Scientists believe it is a combination of climate change, mercury poisoning and habitat removal.

Wow, I saw this appetizer dip at Coconut & Limeand just immediately decided that you would want to see it. It is just yummy looking. Oh I hate using the word yummy, that’s a word fit for something like rice krispie bars or something, not this elegant creation. Be sure to look at it, and get a copy and try it soon. I love bonsai. I am totally captivated by the exquisite beauty of tiny trees. I have even seen fake bonsai made of paper and other items, and been so distressed that I could find no “instructions” on the internet to learn this very technical craft. The reason i want to learn fake bonsai, is that I have had no luck in keeping any bonsai of my own alive. Perhaps Sally’s Gardening Tips will help me.

Essential Estrogen puts a human face on the Postville roundup. Real people with real stories. I can find no anger in my heart at the lives of these people who come to America out of desperation and hope. I have no desire to see them sent back to their home countries. For most, even a life of relative poverty in the US is far better than what they endured at home. I think we are big enough to open our arms and make room.

I for one was rather disappointed some years ago when Tom Daschle lost his Senate seat to some nobody who slid in on Bush’s 2004 coattails. But Mr. Daschle has a new book out on Health Care, and is firmly in the Obama camp. It seems a bright light on the horizon for those of us who are passionate about this issue and have been fearful that only Clinton could get it done. Here’s a post that left me scratching my head. I would understand this if it were Guam or Puerto Rico or some other island nation that we are a protectorate over, but there are some in Hawaii who want independence from the US. Now I thought that issue was settled by the Civil War. Apparently it’s not, and History News Network has the story. Most strange, indeed. This simply doesn’t strike me as a case of colonization.

One of the unsavory aspects to American History has to be the trampling of individual rights by colonials in their desire to preserve a pure religion in their realm. In fact, as I’ve noted before, most of the colonies were church/state organizations which allowed no “foreign” interference by other religious groups. Catholics, Jews, Quakers and others were systematically banished, murdered, jailed, and were not allowed to own property, vote, or hold office. History of American Womenhas a fine piece on a Native American charged with witchcraft back in early Massachusetts. Read the story of Tituba and her tragic life.

Representative Steven King (R. IA) continues to be on the wrong side of most issues these days. He was against the new GI bill of course, that is predictable, since Republicans don’t care about veterans once they finish fighting their wars it seems. He was also THE ONLY IOWAN who voted against the bill to direct Bush to stop filling the Strategic Petroleum Reserves and give some relief to consumers. He of course wants more drilling, even though such resources are small, soon depleted and worse a serious ecological threat. Looks like another one ripe for defeat come November to me.

Mad Kane hits the nail again, as she explains how Congressional GOP’ers are running desperately away from Dubyasince everything Republicany is losing these days. Oh as I said, nothing more need by said, just show over and over again, that image of man love of Dubya and Mac embracing so touchingly. That is all the Democrats have to do. Show the picture, again and again and again.

Mamiedale has some tutorials for you. Three, of which a couple looked somewhat interesting. Hand-bound journals are fine gift givers, and the shoulder bag from an old sweater might tempt you to take a look.

As you might expect the right wing wingnuts are in a dither today. That thing in California and gay marriage you know. Nobody gets as dithery about these things than the National Review. Of course civilization as we know it is about to collapse. Go there and laugh at the hand wringing that is going on. Oh, marriage needs our protection, against something or other. The sky is falling, judicial overstepping activism. You can find every code phrase you are looking for. I’m just chuckling. As always when reading anything from the NRO,always check to see where the author is from. LOL Seriously, if you would like an unbiased look at the decision, read Glenn Greenwald’s piece at the Salon. It’s at least objective in its reporting.

Unbelievable as it may seem, and its believable given this administration, Blackwater’s contract in Iraq has been renewed. The Bushites continue to rely on mercenaries to do its job for them, and they are not subject to anybody’s jurisdiction. So of course, they can kill with impunity and not be charged with a thing. Oh George, I do hope you live long enough to see the judgment of history on your pathetic administration. Generations to come will wonder why oh why you were not impeached and a dozen or more of you guys jailed.

Oh I am in heaven. I love Roman history as I’ve said before, and a new biography of Julius Caesar is just out. It’s by Philip Freedman and I’ll be attempting to secure a copy for review!

More news on the evolution topic. For some years now, a lot of work has been done on the mitochondrial “Eve” mother to us all. She was an African of course. About 60,000 years ago, humans started moving out of Africa and around the globe. But before that, they were not it seems a single group, but one highly divided on the continent. It appears now that due to climate issues, the split may have been for literally tens of thousands of years. It’s fascinating and you can read more at Science Digest. It seems we have another “international” recipe. This one from Simply Recipes and it features Moroccan Spiced Grill Chicken Breasts. As the grilling season starts up, this is one to try.

It seems the theme of the McCain campaign is going to be “I’m more American than he is.” That such an argument is illogical and untenable is obvious. That it smacks of a party that has lost all claim to morality is also obvious. That it will not work is also obvious. Read Harold Meyerson’s article in the American Prospect. And if you still have doubts about the disaster that is the Republican Party, read this little ditty from The Nation, “Is the Party Over?” This is one of the must read articles. It’s simply excellent.

Baking Beauties brings us a lovely Italian bread recipe that fits in with any Italian meal and well, most any meal at all. Italian Bread Wedges will certainly fit the bill, and are easy as snap to make as well. I’m making it pronto!

Anti-war veterans from Iraq and Afghanistan are finally getting a chance to speak. In unofficial Congressional hearings on the Hill, veterans remark on under reporting and misreporting on civilian casualties, racism by commanders regarding Iraqi citizens, and severe over-reaction in terms of fire power. The Washington Independent has this under-reported story.

Vox Nova steps in with a post about John McCain’s chief political advisor. Remember he just lost another one for being a lobbyist in the pay of the Myanmar Regime. Now it seems that another lobbyist and chief political adviser, Charlie Black, is being seen for the slime he is. He’s a money lobbyist for an array of thugs and other dictators around the world. Is senility in full control of the Mac’s brain? This kinda thing makes your skin crawl.

And to finish off the serious news, take a gander at this site, brought to us by the World History Blog, called Reportret,and true to it’s name it attempts to make an unbiased assessment of what figures from history might have looked like. These are of people for which there are no known portraits or pictures of any kind. They give a long explanation of their technique as well. I think you will enjoy the trip. Jesus, Mohammad, Christopher Columbus are among those featured. Really nice sources at the end of each “portrait.” These are not clay recreations, but an attempt to locate the person in terms of his status, ethnicity, and any other factors that might impact looks.

Now on to the other stuff.Urantian Sojourn has a piece by Terry Hart that is wonderfully funny and witty too boot. It’s just a collection of great tag lines he’s picked up along the way. I have a list too. It reminds me that I should resume my monthly tag for this blog. I’m envious of some he has, especially the one entitled, “Now, go spread some peace, love and understanding. Huge political fireworks today after President Bush went to Israel and he talked about American politicians who might want to talk with Hamas or other leaders. Politicians who would sit down and appease terrorists. He said he would not do it. He would not put up with it. He would never talk to terrorists.
